Blackberry Syrup Recipe and Multiple Uses For It!

This post seems perfectly fitting for a Friday. I love making my own syrups to have around the house, especially fruity ones! This blackberry syrup I created before kids and I would make delicious Blackberry gin drinks with it. Now that I have kids, I still make my gin drinks (you could change it up and use vodka or your drink of choice), but it’s also great for the kiddos pancakes, or just to mix with club soda for a tasty virgin drink.

This is a very simple recipe, as you are making just a blackberry simple syrup- yum! You can also use this with other fruit if you want to make a different flavor syrup (strawberries, rasberries, etc.)

Ingredients

  • 2 containers blackberries
  • 1 cup sugar
  • 1 cup water

Instructions

  1. Place blackberries in a pot.
  2. Add 1 cup water and 1 cup sugar.
  3. Bring mixture to a simmer and stir until sugar is completely dissolved (5-10 minutes). I let mine simmer 10 minutes to get as much blackberry flavor as possible.
  4. Remove blackberries from the pot using a slotted spoon. Store in an airtight container. (These can be used in a drink or on top of a mountain of pancakes!)
  5. Transfer syrup to a container that is easy to pour (I use an old syrup container or a salad dressing container with an easy pour).
  6. Store in fridge and use on pancakes, in a club soda, or mix with gin and club soda for a tasty adult beverage 😛

Chocolate Chip Pizookie

Chocolate Chip Pizookie! My favorite dessert by far.

Are you looking for an easy make-ahead dessert? I am obsessed with the pizza cookie, or ‘Pizookie.’ My obsession with these began in college at CU Boulder thanks to BJ’s Restaurant and Brewhouse.

I found these cute mini cast iron skillets from World Market, but they carry them at Target and Bed Bath and Beyond also.

I found a great recipe for pizookies from Martha Stewart that doesn’t require an electric mixer. You can make any flavor cookie you like! Don’t forget to serve with a scoop of ice cream (or 2) and for those of you with kiddos, maybe a few sprinkles!

Bachelor Watch Party: Success

Bachelor Night Watch Party

Yep, this is happening. I am going to go full on nerd here. I have a friend from High School who has hosted a bachelor watch party for 4 or 5 years now which is 8 or 10 seasons of the bachelor/bachelorette. There is a group of about 10 or so girls that get together every Monday to have dinner together and watch it. It makes watching the show so much more fun when we can chat about all the drama and pick who we think will win, who we like best, etc. The finale of Nick’s season of the bachelor is premiering next week and I am so sad because it gives me something to look forward to every Monday. Anyways, my friend Rachel is on a beach vacation (lucky gal) with her family and her five-month-old son so I hosted the event for this week. 

It was the fantasy suite date episode, the final 3 women, and also women-tell-all (3 hours of show). For those of you who watch, you know that Chris Harrison tells us it’s the ‘most dramatic episode yet’. Well, us girls popped a few bottles of wine, had a nice dinner, and snuggled in to watch the show and holy drama! The girls on the show are so catty and pick fights with each other and its extremely entertaining to watch. My favorite part about last night was we all kept coming up with hysterical memes throughout the entire show of certain girls facial expressions and what the best/funniest verbiage would be.

If you and your friends have a favorite show, I highly suggest having someone host at their house each week so you can watch and gossip about it all together (or maybe you pick up the Bachelor because there is so much fun drama). It makes it so much more fun! For anyone who watches the bachelor, you should make these cute rose apple puff pasty desserts I made last night maybe for next weeks finale- they are so darn cute! Also, that E wine was delish- we drank every last drop 🙂 My mom actually suggested that wine, and everyone really enjoyed it! Have you noticed the theme? Red wine, red glasses, red apple dessert, we had spaghetti with red sauce, the list goes on, haha!

February Means Love

Okay, so I don’t know about you, but I am so excited that we have finally finished January and moved into February. It is time for hearts, valentines, love, and everything PINK. To get in the Valentine spirit, I decided to make some festive Blondies while also getting out a few of my Valentine decorations.

I have my mise en place and I am ready to get going on some baking. I followed the Food Network’s Blondies recipe and instead of mixing in M&M’s, I just topped the batter with them (prior to baking) because I bought larger sized M&M’s since they were ‘conversation M&M’s’. I baked them for 25 minutes at 375 degrees and voila! You’ve got yourself a Valentine treat 🙂

Here I am trying to get the perfect picture and focus in on what really matters, but my pup, Paisley looked too cute to crop out. I took cookie cutters to the Blondies for a special Valentine touch and filled my cute candy dishes (A gift from my mom years ago but I found them in white!) with some festive jelly beans. And what is a post without baking aftermath…
