Chocolate Chip Pizookie! My favorite dessert by far.

Are you looking for an easy make-ahead dessert? I am obsessed with the pizza cookie, or ‘Pizookie.’ My obsession with these began in college at CU Boulder thanks to BJ’s Restaurant and Brewhouse.

I found these cute mini cast iron skillets from World Market, but they carry them at Target and Bed Bath and Beyond also.

I found a great recipe for pizookies from Martha Stewart that doesn’t require an electric mixer. You can make any flavor cookie you like! Don’t forget to serve with a scoop of ice cream (or 2) and for those of you with kiddos, maybe a few sprinkles!

Pineapple Mint Sorbet

How goes it everyone?

I am sharing my sorbet recipe that I shared on my Instagram post yesterday. You won’t believe how easy it is, but it is AMAZING! So refreshing and satisfying- you have to try it. I will say that I have always been intimidated of cutting pineapples, but we have had SO much pineapple since I purchased an amazing coring tool to help make it much easier! I love a good kitchen gadget!

Ingredients:

  • 2 pineapples, peeled and cored
  • 2 small lemons, juiced (about 4 tablespoons)
  • 2 cups sugar
  • .5 ounces mint (1 small herb container, more to garnish)

Instructions:

  1. Blend pineapple and lemon juice in blender.
  2. Add sugar and blend until smooth and dissolved (30 seconds-1 minute).
  3. Add mint to your liking- I love mint so I used the entire container, minus one sprig for garnish.
  4. Pour mixture into the freezer can of an ice-cream maker. This is the one I use and I love it, especially since its automatic 😉
  5. Churn for 15-20 minutes or until the desired consistency.
  6. Freeze for 3-4 hours.
  7. Serve and enjoy!

Frosé- Cool and Refreshing

The temperatures are rising, and everyone is in need of a cool, refreshing drink! I obviously always think pink 😉 and Frosé is just that! Refreshing, tasty, and aesthetically pleasing. I’ve already made this recipe twice and it has been a hit at both events. The first time I followed the recipe exactly, and the second time I decided to add the strawberries into it in addition to the strawberry syrup. It made it a bit sweeter and brighter, but you did end up with seeds in the drink at the end. I would recommend following the recipe, or at least blend the strawberries separate and then use a sieve to get out the seeds. Add any fun or cute garnishes and sip and enjoy… ahhh!!!!
