Blackberry Syrup Recipe and Multiple Uses For It!

Adding sugar to the blackberries and water

This post seems perfectly fitting for a Friday. I love making my own syrups to have around the house, especially fruity ones! This blackberry syrup I created before kids and I would make delicious Blackberry gin drinks with it. Now that I have kids, I still make my gin drinks (you could change it up and use vodka or your drink of choice), but it’s also great for the kiddos pancakes, or just to mix with club soda for a tasty virgin drink.

This is a very simple recipe, as you are making just a blackberry simple syrup- yum! You can also use this with other fruit if you want to make a different flavor syrup (strawberries, rasberries, etc.)

Ingredients

  • 2 containers blackberries
  • 1 cup sugar
  • 1 cup water

Instructions

  1. Place blackberries in a pot.
  2. Add 1 cup water and 1 cup sugar.
  3. Bring mixture to a simmer and stir until sugar is completely dissolved (5-10 minutes). I let mine simmer 10 minutes to get as much blackberry flavor as possible.
  4. Remove blackberries from the pot using a slotted spoon. Store in an airtight container. (These can be used in a drink or on top of a mountain of pancakes!)
  5. Transfer syrup to a container that is easy to pour (I use an old syrup container or a salad dressing container with an easy pour).
  6. Store in fridge and use on pancakes, in a club soda, or mix with gin and club soda for a tasty adult beverage 😛

Pineapple Mint Sorbet

How goes it everyone?

I am sharing my sorbet recipe that I shared on my Instagram post yesterday. You won’t believe how easy it is, but it is AMAZING! So refreshing and satisfying- you have to try it. I will say that I have always been intimidated of cutting pineapples, but we have had SO much pineapple since I purchased an amazing coring tool to help make it much easier! I love a good kitchen gadget!

Ingredients:

  • 2 pineapples, peeled and cored
  • 2 small lemons, juiced (about 4 tablespoons)
  • 2 cups sugar
  • .5 ounces mint (1 small herb container, more to garnish)

Instructions:

  1. Blend pineapple and lemon juice in blender.
  2. Add sugar and blend until smooth and dissolved (30 seconds-1 minute).
  3. Add mint to your liking- I love mint so I used the entire container, minus one sprig for garnish.
  4. Pour mixture into the freezer can of an ice-cream maker. This is the one I use and I love it, especially since its automatic 😉
  5. Churn for 15-20 minutes or until the desired consistency.
  6. Freeze for 3-4 hours.
  7. Serve and enjoy!

Galentine’s Idea: ‘Favorite Things’ Party

Happy Friday!!  I can’t believe we have almost made it to the weekend 🙂

Last week I posted on my Instagram of the ‘Favorite Things’ party I went to. I had some people ask about it, and if you are needing a last-minute idea for a ‘Galentine’s Day’ party, I would highly recommend it!

Here’s how it works- Each person attending the party brings 3 of the same item (their favorite thing). My group sets a budget to stick to to make sure it’s fair, and often times you may want to make a category (beauty, kitchen, etc.) if you are wanting everyone to receive something similar. You put each person attending the party’s name in a basket 3 times. Whoever starts will draw three names out of this basket and that is who will receive their gifts.  They then hand their gifts out to those three gals to open together and you continue so on and so forth. By the end of the party, you will go home with three awesome new favorite things! We take pictures of each item and send out all the favorite things via email so if there was something you wanted to try but didn’t receive you can buy it.

Anyways, I brought the NuSkin Whitening toothpaste as I love how white it makes my teeth. I then came home with three fun, wonderful gifts!

The gifts I received are amazing! A Simplified Life is a really great tool so far in getting my life more organized.

28 in a Nutshell

Hello everyone, I can’t believe we have almost made it to Friday- yahoo! Yesterday was my 29th birthday, and I felt like I needed to do a little reflection on the past year of my life. I truly am still in shock that this is my last year of my 20’s, AH! 

28 was one of my most memorable years yet. The biggest highlight being that this was the year I became a mom for the first time to little miss Brooklyn Ann. This year there was a lot that was out of my control and put into the hands of God. Through faith and prayers we were blessed with a healthy baby girl in September. I overcame numerous trials and came to realize the amount of strength I have within me. I have never been tested as much as I have over the last year, and am truly stronger than I ever thought imaginable. After being home with Brookyln for three months, I had the courage to quit my corporate job so I could take on one of the most important jobs in my opinion- raising my daughter. My birthday last year I was four months pregnant with no clue how much my life was going to change in the coming months. My birthday this year, I have a seven month old daughter who brings me more joy than I have ever experienced or thought possible. 

The word ‘blessed,’ to me, is an over-used phrase and as I sat up in bed last night after what was a hands-down perfect and special day, I couldn’t come up with a better word for how I feel about my life. I am so very beyond blessed- with incredible family, friendships, job, health, and happiness.

In a previous post I wrote about how good friends are hard to find, and with a precious few, you should hold on. This last year I have been blessed with the best friends I could have ever asked for (near and far). I am surrounded by the most thoughtful, loving, and caring friends who have been with me through thick and thin. Even my friends without kiddos of their own, love and care so much not only for me, but for little B as well. The amount of love I felt yesterday was unlike any other year- the pictures that were shared, calls, texts, one of my best friends from middle school took me to breakfast, face-times, walks with neighbors etc. were enough to fill my love bucket for years to come. Thank you to everyone who reached out- I feel extremely fortunate to have you in my life.

For my family, I can’t thank you enough for all that you do for me. I have an extremely loving and caring husband, daughter, fur baby, parents, sister, brother,  in-laws, cousins, aunts and uncles, and grandparents. They have been there for me through the biggest trials from the past year and I can always count on them. I was overjoyed to spend the afternoon with my parents, sister, nephews, and daughter sharing laughs and love around the lunch table. I then came home to be spoiled and pampered by my husband and daughter with a fun family pizza night, cheesecake, singing, laughing, dancing, and a big celebration to top off the night. 

I can’t thank everyone enough for their love and support over the last year. 28 is a year for the books and will be a huge milestone for me forevermore. I love you all so much and can’t wait to see what this next year will bring- Bring it on 29!!! You have a lot to live up to 😉

Super Bowl Party

Who out there is hosting a Super Bowl party on Sunday? I know we are and we are so looking forward to having our friends over for some good food, fun and of course, football. Being from Denver I am sad to see that the Broncos didn’t make it to the Super Bowl this year, but I always love the commercials.

You’ll notice I only bought Super Bowl specific cups, whereas everything else is just football related. I did that because if there are leftover plates or napkins I don’t have to throw them out, but could use them for any football game get-together come fall.
