Spicy Meat n’ Bean Colorado Chili

Ingredients:

  • 2 tbs olive oil
  • 2 lbs ground beef (93% lean)
  • 2 lbs ground italian sausage
  • 1 orange bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 head garlic, minced
  • 2 yellow onions, diced
  • 2 jalapenos, diced (seeded if you don’t want spice)
  • 2 poblano peppers, diced (seeded if you don’t want spice)
  • 2 serrano peppers, diced (seeded if you don’t want spice)
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 3 tbs chili powder (I love the one from Williams Sonoma)
  • 2 tsp paprika
  • 1 tbs ground cumin (sometimes I add a little extra because I love cumin)
  • 2 tsp ground coriander
  • 1 tsp cayenne pepper
  • 2 cups tomato sauce
  • 1 cup tomato paste
  • 1 cup beef broth
  • 2 cans red kidney beans, drained and rinsed
  • 2 cans cannelini beans, drained and rinsed
  • 2 cans spicy chili beans

Instructions:

  1. In a large pot, over medium heat add oil.
  2. Add bell pepper, onions, jalapenos, and peppers, and cook 3-5 minutes (or until onions turn translucent).
  3. Add in ground beef and sausage and cook for about 10-12 minutes (or until it is brown) and break apart as it cooks.
  4. Add in onion powder, garlic powder, chili powder, paprika, cumin, coriander, and cayenne pepper. Stir in until the meat is coated.
  5. Add in tomato sauce, paste, beef broth, and beans.
  6. Bring pot to a boil, then turn down to a simmer, covered, for at least an hour.
  7. Serve with fritos, cheddar cheese, scallions, sour cream, and any other chili toppings you may like 🙂
